Homemade Alfredo


Every time Phillip and I go to Brazil, we beg his mama to make her famous shrimp Alfredo.
It is incredible.. actually, it is beyond incredible. And to be honest, ever since I first tried her recipe, I have not ordered Alfredo at a restaurant again. I used to get it all the time, but just knowing that I can make an even tastier version deters me from paying $12 for a bowl. 


Besides the knock-out taste, this recipe is awesome for many reasons:
  • It's my mother in laws recipe, and she's the best.
  • It calls for just 9 ingredients.
    (most of which you probably already have in your cabinet, can I get an amen?)
  • It takes about 30 minutes to make.
  • Just one batch will serve 5 heaping bowls to 5 hungry people. 
  • It's easy peezy.
We make this every single week; some weeks we make it with shrimp, some weeks we make it with chicken, and other times we just eat it plain. It's delicious either way!




- - - INGREDIENTS - - -
  • Noodles of your choice (We usually use bow-tie or rotini)
  • 2 TBS of butter
  • 2 TBS of flour
  • 1 TBS of oil (olive or veggie)
  • 3 cups of milk (Any kind will work.. we use 2%)
  • 1 cup of Parmesan cheese
  • 1/2 pint of heavy cream
  • 4 TBS of cornstarch
  • Salt to taste

- - - INSTRUCTIONS - - -

  1. On medium heat, melt your butter in a big pot, then add your oil & flour.
  2. Once your butter-oil-flour mixture is melted & mixed up, add your 3 cups of milk.
  3. Next, add you heavy cream and your Parmesan cheese.
  4. I do this next part kind of odd, so I'll attach some visual aid.
    I mix each tablespoon of corn starch with one tablespoon of water (one at a time) to dilute the cornstarch a bit.
    Do this with your first TBS of cornstarch, then the same with the 2nd, 3rd & 4th tablespoon.
    By the time you add the 4th TBS, your sauce should be thickening up.
    After you mix in your 4th, let it sit on the heat for a few minutes, then turn the heat off.

 6. Add salt to taste. Add just a sprinkle at time, until it's salty enough for you. Remember, you can always add more!

  2. This was amazing! I wanted a cream sauce and my dad can't eat too much garlic and this is the only non-garlic recipe I could find. Added some garlic salt & pepper and it was PERFECT. THANK YOU!
